I got this beauty in my CSA box this week, and I was so excited to make, eat, and share one of my favourite salads…
Orange-Fennel Salad with Balsamic Vinaigrette
adapted from the recipe from White on Rice Couple
4 oranges, sliced
1 fennel, sliced
some fennel greens, chopped
3 T ginger & fig balsamic vinegar
1 T olive oil
pinch of sea salk
Slice orange and fennel, arrange in a bowl or on a plate. Mix together ingredients for vinaigrette. Drizzle over salad just before serving.
It is lovely and refreshing, sweet and tart!!
Try it, please…don’t let me convince you how good it is.
